Christmas time is here;)
I was laid off about two months ago, it was pretty traumatic but I made it. It turned out well because now I'm doing the marketing for Doug's law firm and I'm going back to school in the Spring. I will be going on Tuesdays and Thursdays- and working the other three days. It's a fun job and I get to boss my boss around-
We went to Doug's family's for Thanksgiving but I lost my camera after my Florida trip so I didn't take any pictures. It was fun-
I went to Florida with my mom and had a ball- I hadn't gone on a trip with her in a long time, it was great! We went to Universal Studios, Blue Man Group, the beach, Johnson Space Center... oh and the Spa- my mom spoiled me with a full day at the Spa! It was fantasic- I'd never done that before- but I think everyone should, at least once in their life.
Doug and I are spending Christmas here- we were going to go to Texas, but the plane tickets were too expensive and we couldn't use award tickets- so we are going in January instead. To Medina- my grandparents house. My parents and sister (elizabeth and heno) are meeting us there. Doug hasn't been to Medina ever, and it's a euphoric place for me so I'm excited to go.
We'll also go back to Vegas in January- Doug spends time each month down there in the Vegas office- and because I'm working for the law firm.... I will now too!
I'm still planning my Christmas menu, but I'll let you know what I decide-- Merry Christmas y'all!

Left Over Madness
Doug and I have been trying to eliminate waste... OK, I have been trying to eliminate waste and cook more efficiently. I have found some create ideas about how to use left overs creatively. One website is Love Food hate waste, and the other is Recipe Goldmine.
My favorite comes from Recipe Goldmine, in the form of Roast Beef recipes. When we bought a side of beef last year, we had no idea just how much Roast we would be getting.
Roast BeefHappy Cooking!
— Cut into 1/4-inch slices. Dip into beaten egg, then into dry bread crumbs. Fry the slices in oil or butter until hot and golden.
— Put into a crock pot with some canned green chiles, a little cumin, a little garlic, and a little water. Cook until the beef is easily shredded, then use as a taco or burrito filling.
— Top meat slices with cooked onions and peppers and provolone cheese; serve on hoagie rolls.

Winter Shoes
So... it's that time of year! The time when we all start thinking of what we will put on our feet this winter season. How important is this past-time... very important.
Without it you could possibly spend another season with frozen tootsies.
Each of these fill a certain hole in my closet. I've taken this particular matter very seriously and ordered one of each of these boots so I can try them on with my wardrobe and decide what will make the perfect addition this season. Ordering from Zappos makes this really easy because they have free two-way shipping. Every girls dream!

A Memory:
I wrote this blog a few summers ago- and reading it today I remember what I felt as I saw this girls' life pass away in my review mirror.
Discovering Houston (lost just doesn't seem right), I saw a girl while I driving. I spotted her from far away.
First I saw her face. She looked away, trying desperately to avoid making eye contact with the boy that stood in front of her waving his arms and screaming fiercely.
She crouched low and curled as she pushed her feet fervently against the ground and her body into the chain link fence that cradled her.
She wanted to break through.
Tight lips. She tried to be brave and fight back the tears losing every now and then, he wasn't softened by her sadness.
I passed.
In my mirror he thumped her chest, she tried not to notice... I couldn't see her anymore, and I was crying.
Hoping it wasn't, but somehow knowing...this was routine.

Ouch, my back!
I went to this Godsend of a Chiropractor who cracked me into shape. It was actually really nice. When I went in there he looked me over, palpated me, if you will; and determined my problem areas. Then I got on a roller table, it looks like a massage table put it rolls your hips and back up, it's a little awkward but it feels good. Then he put electrodes on my middle back along with some heat on top of that for about 25 minutes. After that he sent a massage therapist in there to loosen things up, and whoa that hurt- after that Dr. Nelson came in and adjusted me. It was fast and relatively painless (although I am a little sore now). Apparently the problem is in the fulcrum of my back (vertebraes 6,7 and crowding my rib space and 8 is protruding... I don't know the medical terms for that.)where I bend over at my desk, it seems hard to fix but I did buy this cool little toy. It's actually a back ball for sit ups- but it doubles perfectly for lumbar support.
I have to go back on Wednesday for a followup- but so far so good. Aside from feeling like I just competed in a weightlifting competition, I feel great!

School's been out forever...
I am really only applying to the University of Utah, should I be accepted it will be another 3 years in Utah. I'm OK with that, truth be told I think that sentence has been set already with Doug's law firm venture. There is so much bureaucratic crap involved with academics it makes me sick. I don't know how many different departments I've had to talk to and go see just to get through basic processes that in reality could all be automated. In the words of my very smart husband, efficiency is a foreign word in government.

Today... I just want to cry.
WRONG.
I was so impatient to get the notes done I didn't put a return address on any of them because I figured that it would end up taking a ton more time (whoa, 15 minutes... big deal). Additionally, I sent cash- Why? Why, would an educated person put cash in an envelope? I can't come up with a reason that sounds good now- but I had cash from wedding gifts, and my checks are still packed away somewhere from the move. SO I sent cash, in a card, with no return address... and she never got it!
